Our Cheese

Meadow

Cheddar

Meadow is a semi-hard cheese with a creamy and flakey texture due to the unpressed curds and a lemony flavor that varies from sweet and buttery to earthy according to the seasons of the grass.  It is comparable to a tomme-style cheese which is a recipe developed in France.  Meadow possesses a natural edible rind - a mold that grows naturally during the cave-aging process and covers the entire surface of the cheese-wheel.  Because our cows are 100% grass-fed, we believe that this name is ideal for our original, featured cheese.

Like Meadow, our Cheddar possesses an edible rind that is produced naturally as it ages.  Other characteristics include its semi-hard texture and its nutty and fruity flavor.  Depending on how long it has been aging, our cheddar varies in sharpness.

Cocoa Cayenne

Coffee Thyme


Cocoa Cayenne is a cheddar-style cheese with crushed red pepper flakes throughout every bite and a rind of honey, cocoa nibs and powder, cayenne pepper, and cinnamon.  As this cheese ages, the flavors of the rind infuse the cheese, yielding a fragrant, spicy taste inspired by Mexican hot chocolate.  (This cheese is produced for limited periods throughout the year).

Coffee Thyme is cheddar-style cheese that possesses a rind of honey, espresso, and thyme.  Like Sweet Cocoa Pepper, the rind's pleasant aroma is reflected in every bite of cheese, delicately reinforcing the taste of sweetened coffee and thyme. (This cheese is produced for limited periods throughout the year).
